Stuffed Zucchini

YOU WILL NEED:
1 medium-large zucchini
3 mushrooms, sliced
1 section of green onion, diced
1/4 cup (or less, depending on your taste) red onion
2 large handfulls spinach
1 1/2 cups (roughly) of "Guest-Worthy Mashed Potatoes" (From the other night's dinner)
1 Tablespoon olive oil or 1 Tablespoon of butter
Garlic salt, salt and pepper to taste
Dice red onion and green onion.  Slice up mushrooms... and place all in a small frying pan on medium-high heat.



Saute until tender and golden brown. Remove from pan and place in a small bowl.

Wash two handfulls of spinach leaves, dry, then cut into smaller pieces.

Place in your saute pan-

And cook down until limp, but still bright green.  Let's keep all the "good stuff" in our veggies!!

Now it's time for the fun part.  Take your zucchini and cut it in half length-wise. Use a spoon to hollow a "boat" out of the two zucchini halves.

Saute the innards (hehe) and use salt and pepper to taste.

Place each half on a tin foil piece...

And fold up the top and bottom edge until it meets the zucchini.

Fold the sides together like so. This creates a no-mess-why-didn't-I-think-of-that moment. :)

Now take your filling items and mix all together- adding shredded cheese at the end.

Fill up your zucchini halves... or rather LOAD em' up with your filling.

Place foil "trays" on a baking sheet for easier transferring from oven to table... or place foil straight on the oven rack.
